Only about 15 minutes away by Mountain Bike from my home in Chalong ,this wonderful place offers just about everything for the Gourmet in You.

The Thai Sea Gypsy people are indigenous to Phuket ,living many generations on the island by fishing the sea for the seafood restaurants,Thai outdoor open markets, for the Expatriate and Thai Families as well.It is not uncommon for me to stop by on the way back from my Mountain Bike ride to fill my pack sack up with a few fresh vegetables and maybe some fish and seaweed as well. The food will be for todays meals and maybe could carry over to the second day to keep things as fresh as possible.As you can see from the photo this Thai market place is an open air, located beside the sea called the Andaman. When you by your seafood or vegetables or both ,you have the opportunity to have some of your food cooked for you at near by restaurants of your choice.But make sure that you tell the cooks not to make it HOT because if you forget this part , for sure it will come back spicy hot, unless you like it that way? From the distant pier Thai long tail boats or speed boats can be hired to take you to near by islands such as Coral Island for snorkeling and relaxing by the beach.
More than 200 different kinds of vegetables are harvested in Thailand each year.

Thailand is an agricultural country blessed with a bounty of exotic herbs,spices,vegetables,fruits,nuts,seeds and grains.

The Thai venders table shows 4 rows of typical Thai produce that can be seen all over Phuket island.
Starting at the top row from left to right we see, starting with the blue basket of green beans,green pepper corns in the pink basket,Yellow Turmeric root in the pink basket,and a tub each of shrimp paste ,and fish paste fermented. Two bags of soy bean sprouts,Galangal Root (related to Ginger),Asparagus,and Carrots.

Second row from the top ,starting left to right is ,a blue basket of Thai Egg Plant, the red basket has green and red peppers,the pink basket with whole Garlic,followed by Onions.

Third row from the top starting left to right is, more Thai Egg plants,Baby Cucumbers,Medium Cucumbers, two baskets of Tomatoes,followed by a pink basket of Onions.

Fourth row from the top in front of the table is,Phak chi farang,Thai Celery,Spring Onion,Mature Thai Celery,Large Bitter Melons,Giant White Radish ,Thai Long Purple Egg Plant,followed by a green basket of limes and packaged Shiitake Mushrooms. Limes are used more and are much more popular then Lemons in Thai cuisine.Very rare that I see Thai Yellow Lemons in the market place.

Why Buy Organically?

This question gets tossed around for ever , because I believe that first the typical grocery store is selling mostly conventional treated produce for a few decades now, and more and more shoppers today until recently are less complacent about how their food is produced and handled.
And on the other hand, many consumers do not want to pay the higher price for organic ,fruits and vegetables and they believe that simply rinsing and washing conventional produce will take care of the problem. This second point is why I am so compelled to write this article.

I wish that it was that simple but it is not. The stark truth is, that all the washing , rinsing,scrubbing,soaking with biodegradable cleaning agents will not get rid of the pesticides in your produce. This is why!
First our food provides nutrition to us not directly from the actual plant that we eat ,but really from the nutrients mainly from the soil, that the plants root systems are systemically absorbing internally and through out their stems and leaves. Plus our produce feeds off the the air, and the sun creating the green pigment of chlorophyl and fibers that are missing in all our meat products.

For instance in the Laboratories of Bio Tech Science it is common procedure for the scientists to routinely test their pesticide agents by inoculating the plants root systems to create data of the plants absorption rate via the root system in the soil. This method will tell science what efficacy the chemical toxin or pesticide has for making the plant disease and insect resistant.
So we are eating conventional plants that is harmful to nature including insect pests, but its OK for us to eat them in the end?
The problem with this method of controlling nature is simple. When the top soil is stripped of its natural amendments of more than 50 prime and trace inorganic minerals with only 3 from the chemical fertilizing industry , plus on top of this, our soil is saturated repeatedly with chemical pesticides , herbicides,fungicides and human waste with mono agriculture (planting the same crop over the same area year after year) our soil becomes woefully deficient , weakening the plant over time.Did you know that on average the chemical application applied to crops,actually succeeds in killing only 2 % of the targeted insect or pest . The rest of the chemical contaminates our ground water, our rivers,lakes,streams and ultimately our drinking water ,because we are drinking the same water over and over again from millions of years of Earths history.The fact is our water has been on Earth a lot longer than we have, and the water never goes any where ,in fact we are consuming our own recycled water for all time including the agricultural chemical run off.
To recap this means that the chemical is not on the out side of the plant as a residue that most people are made to believe,but actually the toxins are stored inside the whole plant including the skin,pulp stem,leaf and even the seed.Hybrid seed have been chemically treated to with stand pest control ,and you get only at best one crop or a second with less satisfactory results.
The best seed to support and buy are Heirloom Organically saved seeds that has been protected and shared among farmers for centuries. Today this sustainable Organic practice is under threat from the US Governments subsidizing with your tax payers money, Agricultural Chemical industries to control our food choices.When you think about it , the USA congress has more than 14,000 special interest group lobbyists to contend with for 365 days in the year. This is just a short list of the most powerful influential lobby groups as followed, the Chemical industry comprised of Human and Animal Feed Pharmaceuticals,Monsanto GMO (Genetically Modified Organisms) Chemical Fertilizer Manufactures,The Bio Tech Industry, FDA,(Food and Drug Administration),AMA,(American Medical Association),all the Food Giants that produce products of Meat ,Dairy, and Processed packaged foods are all linked together in some way or other to control the food industry in such a way that has us believing that it is all good for us.These powerful influential groups have lots of marketing revenue to pay for TV, Radio,Newspaper, magazine,and movie theater adds used for pitching their processed denatured products using clever advertising to get into our heads using famous celebrities,slick 3-D Animations and slogans to promote their image and branding and they know it works.
It works because any given conventional supermarket today anywhere in the world still devotes ,11 isles of meat ,dairy,and packaged processed goods ,to only one or two isles to fresh produce of fruits ,vegetables, nuts,seeds,legumes,herbs,and condiments of Nature.
It is a supply and demand scenario that is playing out,on mass every day we enter the sliding doors of our local grocery store in one grand experiment for our hard earned income.

Conventional soil treated with pesticides against insects, herbicides against unwanted weeds,
Fungicides against Fungus, and Petroleum Based Fertilizers of NPK (Nitrogen , Phosphorus, and Potassium, that only contain 3 prime soil amendments is really unsustainable in the long run. But we know that earths natural fertile soil can contain well over 50 minerals including the essential trace minerals for strong plant health. Over time the chemical treated soil can become more compacted , dry and promote erosion as large parts of China is now experiencing,through the use of this unsustainable practice today. China is the leading the world in Chemical Fertilizer applications right after the USA. It has gotten so bad that now with many Bee colonies collapsing around the world from agricultural chemical use,now in some parts of China the farmers are forced to hand feed their flowers with pollen to grow their harvest as the bees have become extinct in that area.
The problem with conventional agricultural chemical applications is the efficacy is not working.Insects have been around for a very long time ,much longer then us, and they have the ability to adapt to these situations and they mutate and pass their mutated genes off to their offspring to become resistant and immune to the chemical. This forces the Chemical industry to repeatedly, go back to the drawing board,to come up with even more toxic and powerful chemicals that has no end in sight.It becomes a vicious no win situation between man and Nature.The fact is Chemical farming practices are environmentally unsustainable depleting the top soils of our crop lands. And in stark contrast Organic Agricultural practices actually amend the soils with natures biodegradable green composts including bio-diverse marine vegetation to support and to build up our top soils.Our greatest unseen subterranean gardner, the humble Earth Worm is working hard to build tunnels and drainage and to release its castings into the soil to feed , to aerate ,and to add additional drainage to Organic crops root systems. The dry sterile lifeless soil of chemical agriculture has no Earthworms to be found.

The Chemical Fertilizer Manufacturers Association was founded in the year 1897,one hundred and fifteen years ago from 2011. This is a very short time in mans history when you think of how many industrial chemicals with no long terms test results on human populations are now in our own body, plus the thousands that we are exposed to every day of our lives. It is estimated that every human being on Earth today has at least 200 to 500 industrial chemicals , from our water,air,and foods that even though in trace amounts we still do not know what the accumulative effect is on individuals.This kind of exposure was unheard of just a mere 100 years ago before the industrial revolution kicked in to full operation.
More than a hundred years ago ,planet Earth had natural enriched top soil that sustained the human population by Organic means. Back then Organic agriculture was very labour intensive for some crops , and later more innovative ways of increasing crop yields spurred on a new industry to bring short term gains to family farms ,that later mushroomed into very large industrial factory farms that we have today.Today these chemical agricultural Giants , have primarily today replaced many of our ancestral small family farms of the past. But a few are still holding on as Organically grown produce is one of the fastest growing industries supported by a large enough consumer base to keep it going. More people are starting to become aware and informed of their healthy food choices and the information highway has made things easier for the Organic movement to sustain its marketable growth.

A lot of people will not be happy with the following information regarding red meat consumption but the story needs to be told, and the truth needs to be known. The fact is todays meat of every kind in comparison to fruits and vegetables, are much more contaminated with industrial chemicals, heavy metals,antibiotics,growth hormones,parasites,diseased parts,preservatives ,coloring agents,GMO and the list goes on. What Happened ?

While the white or golden tabby coloration of these animals may be pretty, what the zoos won’t tell you is that, in reality, it’s a deadly genetic mutation. THEY ARE NOT A SUBSPECIES, and are not albino.

The white gene is a double-recessive one caused mostly by inbreeding (in a natural mating, there is only a one in 10,000 chance that a tiger will be white), which is why they say that it exists ‘only in captivity’. Zoos are not willing to wait for this one in 10,000 miracle tiger, and so find that the only other way to produce them is through inbreeding.

Even though it does happen naturally in the wild that tigers can be born white, there are many reports of wild tiger mothers attempting to smother their white cubs to death, because the coloration also makes the tigers more visible to prey. In a natural setting, white tigers and golden tabby tigers would starve to death, or die of other complications. This maternal behavior is noted even today in zoos, and often, white tigers must be taken from their mothers immediately after birth. The Singapore Zoo reported that one of their mother tigers refused to nurse her white cubs, so handlers had to raise the infant tiger themselves.

As further proof, white and golden tigers ARE NOT managed by the Species Survival Plan, under the following reasons:
1) the Indian Zoo Association is responsible for managing the Bengal tiger, along with the European EEP;
2) most white tigers are of unknown lineage;
and
3) because the SSP is based upon maximizing genetic diversity. Selective breeding of an extremely rare allele for white coloration is not appropriate.

According to Dr. Ron Tilson, Conservation Director of the Minnesota Zoo and manager of the world renown Tiger Species Survival Plan, "The white tiger controversy among zoos is a small part ethics and a large part economics. The tiger Species Survival Plan has condemned breeding white tigers because of their mixed ancestry, most have been hybridized with other subspecies and are of unknown lineage, and because they serve no conservation purpose. Owners of white tigers say they are popular exhibit animals and increase zoo attendance and revenues as well. The same rationalization can be applied to the selective propagation of white lions, king cheetahs and other phenotypically aberrant animals."

What Dr. Tilson didn’t fully understand was that the inbreeding went even beyond the Bengal tiger bloodline. To make white tigers even more visually-appealing to the public, they were cross-bred with Siberian tigers, which, according to information released by Daniel C. Laughlin, a widely-recognized manager of zoological animals, makes "white tigers in the U.S. crossbred or hybrid animals, part Siberian and part Bengal. So, in conclusion, every white tiger in the U.S. is not only the result of repeated inbreeding of genetically defective animals but, even worse, is a hybrid or crossbred animal. Thus, anyone involved in breeding and/or exhibiting white tigers is doing a great disservice to honest conservation and preservation efforts to save the five remaining and endangered subspecies of tigers barely clinging to survival in their rapidly diminishing natural habitats."

But it gets worse: Laws in the United States actually allow people to own tigers as pets under the condition that they have a permit. Since a white tiger cub can sell for an average of ,000, people are creating these cats through inbreeding in captivity without any professional background or knowledge. According to some sources, 80 percent of these white cubs die. Surviving cubs often have a range of problems including immune system deficiencies, scoliosis, cleft palates, mental impairments and/or bulging, crossed eyes. Also, ALL WHITE TIGER ARE CROSS-EYED, even if it is not readily apparent. This is because the gene which makes them white also messes up the way their eyes are wired to their brains.

Other deformities include serious dental problems and deformed bone structure. Mental issues are probably the most common result (I watched at a roadside zoo here in Oregon as a white tiger licked a concrete wall until its tongue bled). Gnawing on fences or enclosure walls, pacing and constant salivation are other sure signs that the cat you are looking at suffers from the affects of its unfortunate ancestry.

Often, you will see photos of white tigers being fed milk from baby bottles, or sucking on their trainer’s fingers during performances. Biologists believe that this a sign of prolonged stress in the animal, and that it has regressed back to acting like a dependent cub. This is not healthy and should NOT be encouraged.

Over all, it’s a sad issue which is not being noted by the public enough to end it. Most zoos and safari parks won’t even tell you about the inbreeding issue, or will claim that their white tigers were a ‘natural’ occurrence. But there have been no ‘natural’ white tiger births since 1951.

What these establishments are doing is wrong and immoral, and lying to the public about their tigers (or at least withholding the information from the public) shows quite obviously that they are not in it for the animals; they are in it for the money. Deliberately breeding an animal in the knowledge that its life will be unnecessarily painful is cruel, and is a practice that should have no place in modern animal care. White and golden tabby tigers are merely a product of the practice of inbreeding, and are not being bred for any sort of conservation program, regardless of what various zoos and other establishments claim. The Endangered Species Act does not classify golden tabby or white tigers as under threat; they are instead classified as a genetic variant. Tinkering with their genes in order to ‘improve’ them is just an act of vanity on the part of humans.

THE BEST THING YOU CAN DO TO HELP: Inquire at your local zoo as to where they got their white tigers, and let them know that you are aware of the issue noted above. Also, avoid roadside zoos which house white tigers, as these establishments are the most at fault for the inbreeding. But above all, education is the best means of helping the unfortunate plight of white tigers. Spreading the word of the inbreeding will make more people aware of the unfortunate plight.

In my previous articles I would always make reference to my kitchen as being a Garden Kitchen. The reason is simple. On both sides of my kitchen you can see my garden in all directions through the windows. The only actual gardening that I would do in my kitchen is sprouting seeds, and nuts and grains for growing grass in dark corners of the kitchen away from direct sun light. But when you think of it my real garden is out side and not part of the my kitchen so now I have changed the name of the place where I do all my food preparations as my EARTH KITCHEN.

My definition of an Earth Kitchen is simple: Utensils for low heat ware is kept to a minimum such as a good Juicer,a glass Blender (I have 2 of them) a milling cup machine that works with the blender, a Steam basket stainless steal & Glass (Glass is better because it does not contain the ( Heavy metal Nickel that can be leached from Stainless Steal when heated) A one plate induction cooker, lots of glass jars including mason jars, lots of different size stainless steal colander straining baskets for rinsing of your produce and sprouting of your foods.
I will let you have one frying pan and a sauce pan but I will let you know ,how I use them in my food preparations for good health and wellness.
Lots of quality ceramic and glass dish ware (No Plastic) with wooden ,ceramic, utensils for the low heated foods and stainless steel for the room temperature foods. A few Good quality unbleached( Bleached White contains the Carcinogen Dioxin) Natural Fiber Matts and Towels used for Matt Sprouting and general clean ups.
Various wooden and tempered glass cutting boards, with quality culinary hand tools for basting,cutting, squashing, grating,mixing,measuring, and marination.
All biodegradable cleaning solutions such as Lemons, Limes, White Vinegar, Food Grade Hydrogen Peroxide, Baking Powder (Non Aluminum)
Of course an Earth Kitchen will be very basic for a Raw Foo-dist Paradise in Heaven with no unnecessary distractions such as a TV, Radio,Micro Wave,Traditional Stove top burners, Oven ( with a few exceptions) Toaster, Broiler, Deep Fryer, Charcoal Barbecue, or any other high temperature kitchen contraption that is used for denaturing Natures Whole Foods in the name of Taste. Why does everything have to be so expensive, so time consuming,and so complicated ,when it comes to the culinary art of gourmet cuisine?
It is better to keep things simple, to save money, to save time in food preparation,and to enjoy the rainbow colored whole foods , and the delicious taste of whole food raw gourmet cuisine that is more healthy and flexible than any other culinary art in my opinion.

One Note : I do not use a Dehydrator simply because you want the high water content foods to
hydrate your body as much as possible we are are made of 90 percent water and there is a serious problem today with dehydration from processed dieting. All your digestive organs will have to work extra hard, using Enzymes to break down the cooked or dehydrated foods small enough for your body to assimilate the nutrients into your small intestine,where as fresh raw juice does not have this problem.
With better and more efficient assimilation of nutrients from Juice and Raw Whole Foods , your body will repair and recover faster from ailments and studies have proven this fact.
Most people when they start Juicing at home using their chosen ingredients of fresh raw Organic produce, become aware of how good Nature is in the Taste Department .And eventually also in the Health and Wellness Department as well , they just Feel Better.

You can not get the same benefits from store packaged juices because the retail giant knows that their product is often shipped around the world and needs to be treated with a long shelf life application such as , pasteurization that kills life giving Enzymes, Preservatives, Coloring, unreal Juice from Concentrate,High Fructose Corn Syrup, water, refined white sugar then stamped with an expiration date on the carton. Can you really call this juice from nature?
Are you really getting value for your money ? When you think of the Food Giants advertizing cost for product Label packaging , TV and media advertising, Storage,Shipping and then the Retail stores mark up on top of your juice product.
Who pays for all this ? Its not the Processed Food Giant ? It is YOU ! The United States government subsidized agricultural corn industry, along with the processed high fructose corn syrup manufactures are working hard to get the FDA (Food and Drug Administration ) to change the “High Fructose Corn Syrup” HFCS name to be changed to a new marketing name called “Corn Sugar” CS. The reason is simple. There is way to much bad publicity,and consumer concern affecting sales negatively. Enough people have lost trust and confidence in the product ,so industry is scrambling to change the name to something sounding more NATURAL to the consumer to boost sales.
IN contrast,Nature on the other hand does not care about what we think, or care about sales and profit what so ever. In fact nature can be very generous and giving to us with a bounty of food with out any conditions or interior motive. Like my mango trees and coconut ,and papaya trees giving so freely and so unexpectedly bumper crops of free food for my family , in exchange for just some water and soil amendments during the dry season.
Most people today buy for Convenience ,and this is the way our present standard of living has been set up for. It all comes down to supply and demand for the consumer.
Science and Studies have proven that for health and wellness there is no comparison between a store purchased juice and a freshly made juice produced in your Earth Kitchen. Lack of Convenience does not even factor in when you have scheduled the juicing time in to your daily routine, and you count the savings of your money,the health benefits and even the superior taste of freshly squeezed raw earth juice.

The less expensive faster juice machines will oxidize your juice destroying some of the nutrition , and the warranties are probably less time with little or no after sales support so I would go for the best one that fits your budget.
There is a serious health risk for consuming heated pasteurized juices ,including most cooked foods today. Science is still trying to figure it out and studies have backed up the phenomenon regarding the immune system bombarding the heated juice or foods with a high white blood cell count, by as much as 300 %. It is tantamount to your body rejecting the cooked product in your system ,treating it as if it was foreign and diseased and this is not a good thing. This phenomenon is called Digestive Leukosytosis and it occurs only when cooked or processed food has been digested. This forces the pancreas to release digestive enzymes that are lacking in the pasteurized juice , delaying the transit time and generally overburdening your digestive system. A simple solution to all of this would be to add some Raw foods to your cooked foods or juices no less then 50/50 to keep the Digestive Leukosytosis down to a minimum. 80 Raw and 20 cooked would even be more ideal.

The important thing about Earth Juicing is the ratio of fruit to vegetable for maximum nutritional and disease prevention support. Go for the Super Dark Greens in most of your juicing. I know about the bitter bad taste of greens believe me I know , but every Herbalist will tell you that the bitterness of foods are good for your Liver and acts like an over all cleansing tonic for your immune function support as well.
Stop!! before you go running away, there is good news to all this. It is the various fruits that you can add to the greens that will effectively ,neutralize or at least reduce the bitter after taste of the greens.
Depending on the Greens used I use the following Earth Fruits to naturally enhance the over all taste.
Banana, Mango, Coconut meat,and Coconut water , Pineapple (Proteolytic Enzymes Bromelain that are concentrated mostly in the stem and middle section of the pineapple) Papaya (Enzymes Papain)The seeds of Papaya are used for killing Parasites, Mangostein,Apple,Pear,Date,(Any of the root vegetables that are naturally sweet) Oranges, and may be a few that I have not mentioned here but the important thing is this.
The same formula above can apply to blended smoothies as well. It is a fact that every one has different taste buds , thats why we don’t all eat the same thing so experiment with your options to create the most delicious , and exhilarating Earth Beverage for your self ,and for our friends and family.
After juicing drink right away for best health results. Any of the left over juice can be stored in your refrigerator at the back where it is the coldest. Try to consume all of it in the same day for the best health benefits.

What to do with all that left over fiber from your juice machine? Compost it of course! More than 15 years ago I purchased a manual Compost Tumbler machine to break down all my kitchen scraps ,grass clippings ,and yard waist . It is a great investment for Planet Earth and for your house hold as well,as all this biodegradable waste that normally would just go straight into our land fills gets properly treated at your home with no mess and no fuss.Sending your Kitchen and yard waste to landfills creates many environmental problems such as vermin contamination and related diseases , pollution of our water sheds and pollution of our air via incineration plants. When I worked for a Giant retail food corporation in Canada as a teen , I found it appalling to see how much good food was being compressed for shipment to the land fills. But that is just a drop in the bucket compared to all the house holds that do not compost at home. Compost Tumblers are the most efficient and easy to use and take up very little space and they come in all kinds of shapes and sizes and pricing to fit your home requirements. Personally I would invest only in a good Tumbler and not a Bin for the fastest compost results. Things to compost would be all your RAW not cooked kitchen scraps,your teas and coffee grounds, grass clippings, and soft yard waste like leaves and flowers. It is a good idea to add a bit of water for moisture now and then including some saw dust , and rich garden soil as starters for the living bacteria to work its charm. Also any inexpensive dry seaweed found often in Asian food markets helps to add missing iodine with the sea minerals that we rarely find in
food land crops.Just soak the sea weed in water and mix it in your blender and add what you need to the Tumbler. The rolling action of the compost tumbler daily ,helped by the aeration of all the air vents and holes on the tumbler will break down your biodegradable waste into something resembling a dark rich loamy soil that will easily dry out once it is dumped onto the ground to further mature into a fine green compost.
I advise not to use any animal products, cooked foods or anything that does not come directly from Nature. We all know that perishable produce can spoil fast like bananas,and its a shame not to recycle this organic byproduct back to nature to nurture our garden , and edibles for a safer food,and to be Friends of the Earth.

Some times seeds or nuts will actually germinate inside the com poster under certain conditions. After spreading my compost all over my garden , I noticed after a few days that lots of the same looking plants that eventually turned into trees where every where. Not that I am complaining or anything,in-fact I am delighted to say the least. Today I have year round organic Papaya with no end in sight , I have been blessed by Nature.
Earth Juice ingredients from the Photo:

2 Carrots medium size. 1 cup of chopped Beet Root. 1 stalk of Fennel 1 stalk of Celery 1 stalk of kale or your favorite leafy green.
1 hand size ripe tomato. 1 whole Apple (Organic) A small hand full of your favorite mixed fresh herbs such as ,Sweet Basil,Chicory,Mint. One teaspoon of half ground cinnamon powder and one half to one tea spoon of your favorite Green Super Food powder such as Chlorella, Spirulina,Wheat or Barely Grass, powdered Sea Vegetable.
Feed all the ingredients through your juice machine stir and pour into a glass. You can sprinkle a bit of black pepper on top to give yourself as much as 600 percent nutritional assimilation according to research studies.
This will taste extremely BITER to your taste buds, but don’t worry it actually is a cleansing Liver tonic that is good for your body even if it tastes bad. All bitter Green foods have alkaloids and Chlorophyl (The Green Blood of Plants) that makes the juice taste Bitter.

The next step is easy just juice more sweet apple into the collection chamber and taste for each apple. Sooner or later you will find out what is just right for you. When shopping for your selected produce for your juicing pleasure , it is important to go for the greens. For example did you know that most of the Phyto Chemical Super Green Nutrition

Wild red Salmon from the pacific is delicious , heart healthy , and provides essential omega 3 fatty acids. Of course tropical Phuket Thailand does not have Salmon so I buy it frozen. The way I usually prepare my fish is to Thaw it out clean it with a good rinse then lay the fillet in my steamer . The herbs that I later add in will flavor the fish and in the end you have a wonderful herbal broth to go with the meal.
I consume seafood once or 2 times per week but the raw dressings and salads are always the predominate size in proportion to balance out my Plant Based Diet.
Days on either side of my fish meal is Raw Vegan,Macrobiotics, Mediterranean,and Thai.
What I look for in a meal is it easy to make , in a short time, with high nutritional whole foods
good taste and fun to make? The food must have color and I use low heat methods so that the vegetables are crispy in the center ,but softer on the out side . To achieve this the vegetables must be cut in the same size to give uniformity in taste and texture.

Normally when I make a raw dressing it usually is enough to last me for 3 or more meals over 2 or 3 days. Some times I may have 2 going at the same time for more versatility .Dressings can be used for dips, salads, toppings, adding it to soups, and you can even thicken it with milled seed to make chutneys .Often the dressing is neutral in taste and I can alter it as I please with additional herbal ingredients using things like , Thai Chili pepper and ground onion or garlic to make it hotter. Or I can add raw honey ,stevia, or tamarind juice to make a sweeter taste. Or I can add lime or lemon juice to make sour. Also I can add Pink Himalayan Sea Salt Crystals dissolved in water called (Sole) to give some salty taste. For Bitterness its easy , as most all leafy greens will create this effect for taste like bitter melon greens. And for that tart taste I have many choices like green apple, ground cinnamon,raw apple cider vinegar, and ginger root powder or the raw root for more pungency.

So you can see that it is totally not necessary to use processed flavorings and additives from the store, when Nature provides all that you need when you have the information to work with.

Hot,Sour,Bitter,Sweet,Salty,and Tart can all come from natures herbal pantry shelf.

A good tip for extending the keep of your dressing is to just add some ground cinnamon to taste, as this herb is one of natures highest antioxidants and natural preservative.
If you think that your dressing needs help to finish by the third day, then you can do as I do and share your dressing with your dog. Just make sure that there is no Dark Chocolate or Onions as this is harmful to your pet. Chocolate can give a dog a hear attack , and onions can cause serious anemia toxicity to your furry friend ,so keep this in mind.
Garlic is much less toxic to dogs and some Vets use them and others do not. Other wise sharing smoothies and dressings together with your dog adds good nutrition for your pet dog as well.
Our dog is so dependent on us for their good health, nutritional needs and happiness ,so it is our responsibility to research for them, and to educate our selves to be good care givers of our best friend.

What not to feed your dog with more comprehensive information?

Dogs enjoy soft moist foods ,with crunchiness for cleaning their teeth with, so a shared green smoothie or dressing is well received and appreciated ,and my dog has no complaints what so ever. I felt that the following list of No NO Foods to feed your dogs where important enough to cover hear because I think nutrition for our pets is very profit driven, with controversy
and complacency in the pet food industry in general.
Did you know that a dog will some times eat grass when it is feeling ill to induce vomiting?
Animals seem to know what to do for them selves at times.
I have included some of my own comments to the list only to bring more awareness to the topic and that said ,I wish to conclude that the list is very complete and informative with solid information given ,that every Dog care giver needs to know. I learned a few things from this list and some of the information may surprise you.What not to feed is just as important as what to feed to your dog.

Do not feed the following foods to your Dog:

Any foods containing caffeine like coffee,chocolate,tea,or anything stimulating to the nervous system.
Grapes, raisons,and currants are toxic to the kidneys, but grape seed extract has no known toxic effect or side effect.
Hops can cause a dogs temperature to rise,increase heart rate, and result in death.
Human supplements containing Iron can damage the lining of the dogs stomach,and be toxic to the liver and kidneys.
Alcoholic beverages can cause intoxication ,coma,and death.( I will never understand why a human would do this to a dog)
Avocado has an ingredient through out the plant called persin, that can cause vomiting and
diarrhea. I will not name the well know brand name company ,but Avocado is used through out and its part of their marketing in a big way.
The following is obviously toxic to your dog such as ,salt in large quantity, tobacco,marijuana,and high simple carbohydrates of refined sugar.
Refined sugar causes dental tooth decay,and possibly diabetes melitus. Both dogs and humans are subject to this problem when commercially processed foods are part of their diet.
Yeast dough can cause pain in the stomach when it expands possibly rupturing the intestines.
Soya Bean is not digestible in dogs ,and in fact this applies to humans as well.Soya Beans that are sprouted and fermented have lost their enzyme inhibitory and are readily digested by the body for humans but I don’t even give this to my own dog.
Soya and corn are the 2 biggest cash crops of the biotech industry that produces GMO,genetically modified organisms for the livestock, human processed food,and pet food industry. I personally do not feed processed commercial dry dog kibble to my dog.
Mushrooms can contain toxins that affect multiple areas of the body that can possibly shock the dog leading to death.
Pits from fruits like persimmons,peaches, and plums can obstruct a dogs intestinal tract.
Dairy causes diarrhea in some older dogs. I always thought that the only dairy a human or animal would ever need is its own mothers milk.
Bones on the do not feed list has been kicked around for a long time between the two camps .
One camp that advocates the barf raw diet, and the other camp that advocates the cooked diet.
Bones that are overly cooked are reputed to possibly cause , obstruction or laceration of the digestive system.
Raw meat is on the list for containing bacteria,such as Salmonella, and E.coli ,which can cause vomiting and diarrhea. Un like a human a dogs internal digestive juices are extremely acid in nature and yes if the dogs immune system was compromised in any way yes the raw meat can adversely affect the animal. The problem with raw meat is it is an incubation medium for parasites that can be transmittable to humans and to dogs.
Raw eggs contain an enzyme called , avidin which decreases the absorption of theB Vitamin called Biotin leading to skin and hair coat problems.
All fish that is raw canned or cooked served in high amounts or exclusively can cause a B vitamin named thiamine to be deficient in the dogs body.This could lead to loss of appetite ,seizures and in severe cases possible death.
Fish contains the Omega 3 Fatty Acids that are seldom found in todays land meats as grass fed open range live stock practices are now intensive feed lots where the animals are living in tight quarters.I feed my dog fish in moderation with days off.

Macadamia nuts contains an unknown toxin that can affect the dogs digestive ,nervous system and muscle.
Rhubarb leaves contain oxalates, which is also present in many plants such as the weed lambs
quarters, Buckwheat,Black pepper, parsley,poppy,amaranth,spinach,chard,beets,cocoa,chocolate,most nuts,most berries,beans and leaves of tea in that order. Oxalates are plant acids that are synthesized via the incomplete oxidation of carbohydrates.
Fat trimmings can cause a dog to have pancreatitis. Pancreatitis is a condition of inflammation of the pancreas from eating a fatty diet. This condition can be reversed by putting your dog on a lean meat diet. Is there a correlation between dogs and humans here I wonder?
Xylitol is an artificial sweetener, that cause very low blood sugar (hypoglycemia) which can result in vomiting,weakness and collapse. In high doses this Nero toxin can cause liver failure.
Any artificial sweetener, such as Sweet N Low, NutraSweet, Corn Syrup , and Refined Sugar,
should not be part of a dogs diet. Yet refined simple carbohydrates are hidden in many of todays dog treats. I treat my dog with whole foods that he gets every day divided up and stored in a glass jar in my refrigerator.
Table scrapes,moldy foods, spoiled foods,and garbage should never be given to a dog.
All cooked bad food should be disposed of, and any raw left overs can be effectively composted safely for later use in your garden or potted plants. A compost tumbler is easy to make and You Tube has lots of instructional videos,or you can order them online.
String can get trapped in the digestive tract becoming lodged for ever as a foreign body.
String among many other things can be lodged some where inside the poor dogs body. Dogs have the mind equivalent to a 3 or 4 year old human carried right into adulthood so they must be watched and carefully monitored through our their life time. This is part of being a dog care giver to protect your furry friend from mouthing certain things, and for digesting certain things that I dare not mention.
Certain dogs especially sporting gun dogs can have a nose so sensitive it can be 200 times more effective than our own nose for detecting odors, so it is not surprising that they can act around food this way.One danger in winters is the toxic antifreeze that some dogs are attracted to from a leaking car radiator.
And as I mentioned earlier, Chocolate especially dark chocolate , including coffee,tea,and any other caffeinated foods and beverages like soft drinks can induce vomiting,cause diarrhea, and be toxic to the heart and the dogs nervous system.
Onions of any kind including shallots,Spring and chives should never be part of a dogs diet.
The onion family contains a toxin to the dog called sulfoxides and disulfides,that can damage the dogs red blood cells causing anemia. Garlic is much more tolerable, and some veterinarians endorse the pungent herb and others do not.
So now you can see that before you share your raw smoothie or dressing with your dog it is first very important to know from the list above what is not safe to feed.

The secret to good health and weight loss is to eat a large variety of perishable raw foods, that hydrates your body through out the day. The extra fiber and higher water content of the foods will promote good health and you will see results in time.
Processed foods , will do just the opposite to your body.A lot of Processed foods will be dehydrating you , and slowing down your metabolism to a crawl with out the support of dietary fiber. This will cause your digestive organs to work harder to break down foods devoid of enzymes.
I use very little Cold pressed oils on occasion only , and never use them for cooking. I mostly use water to make different broths.The oils are only for adding later to get the consistency that I am looking for. My low heat cooking medium is always with pure water.
Every meal that I make has rainbow colors in mind from Nature , to be visually entertaining to the senses and to provide as much nutrient dense nutrition as possible. Always most of my servings are predominantly Raw food preparations or semi raw for the life giving enzymes that we need for feeding the cells in our body.
Of course eating healthy and not moving your body will only be half the answer.
Our body needs to be moving everyday to support our lymphatic system and to burn the calories that we are taking in every day. Driving your car less and walking more is a good start,then taking up some kind of physical activity that you enjoy doing would help you to stay with the program. Its the only way to super charge your metabolism.

Barry’s Asian Style Seed & Nut Dressing takes only 10 minutes to make, or longer if your knew with opening coconuts?

Barry,s Asian Style Seed & Nut Dressing:

I have covered how to open coconuts correctly in some of my other articles, so I just want to say that you need the right kind of heavy Knife that has a rectangle blade. And you work in a circular chopping pattern to get the nut open. Practice Practice. The store where you buy your coconuts does most of the work for you by cutting the sides of the nut then making nice cone head points for easy opening.
But for me I often harvest my own organic coconut from my garden to wrestle with them, but I am getting better at it now.Stores do sell coconut milk or cream in cartons if you wish to go that way as well.

Ingredients for Asian Style Seed & Nut Dressing for one person and good for a 3 day supply:

1 cup of sprouted whole almonds.
Sprouting almonds is easy just have them submerged in fresh water over night , then in the morning rinse out all the old water. Then I use the matt or towel method by rapping them up to absorb the excess water. You will notice that your almonds look much bigger than before
‘because they are. They are sprouting , and the enzyme inhibitors , a protein membrane that surounds each nut is being dissolved away.

1 whole fresh coconut .
1 cup of fresh diced pineapple.
1 cup of fresh diced papaya .
1 level table spoon of the following.

Flax seed ,Chia seed,Black sesame seed,and Pumpkin seed.
A bottle of Bee Pollen that should be stored in your freezer as this is an extremely perishable product,and the same goes for flax seed oil and wheat germ as well.
Every store I know of in the US and Canada will practice this way of storing these kinds of products to avoid the product of becoming prematurely rancid , but retail stores in Thailand as hot as it gets here will not properly store these items in the cooler and it just amazes me why there is not any world standard for this.

Directions for Asian Style Seed & Nut Dressing:

Cut open the coconut at the top and pour the water juice into your glass blender.
Chop the nut down the middle in to two parts then scrape out the meat using a spoon and add it to your blender.
Add your pineapple and papaya to your mix in the blender .

Next add one level tablespoon each to your milling machine that attaches to your blender .
I hope that you purchased a quality blender that has this important unit ? If not then you will just add the seed directly into your blender.

Inside your milling machine you have one level table spoon of Flax,Chia,Pumpkin and Black sesame seed . Turn on the machine with the cover secured and grind the seed down into a fine powder. Then add the contents to your blender.

Blend everything together until you have a smooth consistency.
Always after I blend my dressing or smoothie I taste it first for making any necessary ingredient adjustments with more blending until its just right.

Pour your seed and nut dressing into glass gars to be stored in your refrigerator.

Tip for natural preservation of salad and dip dressings :
Natural foods tend to parish quickly if not properly handled and should be consumed as early as possible with in the first and second day for best taste and nutrition.Home made salad dressings in glass jars are best kept in the back of the refrigerator where it is coldest.
Nature has 3 powerful preservatives that you can mix into your raw dressing to taste.
I use ground Clove powder that is one of Natures highest antioxidants and is well documented anti parasitic.
I use ground Cinnamon powder that is also one of natures highest antioxidant herbs and it has the capability to help stabilize the blood sugar .
Raw unfiltered honey is a well researched preservative from nature , and it helps neutralize ,bitterness and tart after taste of the other two herbs.
I usually make enough to last 3 days tops and no longer than this.
I do not trash any of my left over raw dips or dressings I compost it.

Barry’s Asian Salmon Ingredients Recipe:
Takes only 15 minutes to make for one person.

One frozen hand size fillet of Wild Pacific Salmon fish thawed if you live in Asia and fresh or frozen if you live in North America.

Half a sweet japanese potato
Half a medium size carrot
3 garlic gloves and 3 shallots
2 whole limes or half a lemon
half a cup of chopped parsley fresh .
One tablespoon of soaked Wakami Seaweed .
For the tossed Salad ingredients:

One cup of chopped fresh Spinach.
One quarter cup of sliced cherrie tomato.
One quarter cup of sliced red bell pepper.

For the Salmon Baste and Salad Dressing :
In a bowl squeeze one table spoon of lemon or lime juice.
Add one table spoon of raw apple cider vinegar.
Add one quarter teaspoon of Wasabi powder.
Mix well together.

Important Safety note in Food Preparation:

I know this goes with out saying but still it is very important to address.
Use 2 separate cutting boards always , one for the meats and one for the produce to avoid cross contamination between the two food groups.

In your steamer add 4 cups of pure water and lay your Salmon Fillet over the steam basket.
Steam for 5 minutes all by it self.
Next add your evenly cut length wise carrot and japanese sweet potato to the steam basket.
Note :In all steaming it is important to have all the pieces cut evenly in size to create uniform taste through out.

On your cutting board use the flat of your knife to crush the 3 garlic cloves, and 3 shallots.
Discard the skins and add to your steam basket.
Steam for 5 minutes longer and check later with your fork , to make sure that the veggies are soft on the outside but firm on the inside. At the 10 minute mark your fish can be turned over.
You can lower the heat for the last 5 minutes and work on the raw foods now.

On your cutting board cut finely your half cup of loose fresh Parsley herb and put aside.

Preparation of your Tossed Salad :

Take out a large salad bowl for tossing then on your cutting board finely chop a cup full of Spinach and add to the bowl.
A quarter cup of red cherrie tomatoes and a quarter cup of red bell peppers can be added to the bowl.

Now check your Salmon with a fork through the middle and separate to make sure that the fish is thoroughly cooked inside. This is important. Did you know that raw fish like sushi is a prime source of parasites transmittable to humans when consumed ? All meats must be cooked through.
When done using your basting brush cover the fish on all sides with the salad dressing mix.
The rest of the dressing left over can be spooned into the salad bowl. Toss the salad well, I like to use my two wooden forks for the job.

Spoon the tossed Salad into a serving bowl.
Then lay your Wild Salmon fish fillet in the middle of your plate and surround the fish with your sweet potato and carrot.
Add your chopped parsley.
Then spoon your nut and seed dressing around and over the vegetables.
You can place your soaked Wakami Seaweed over the fish and sprinkle some lemon juice with a dash of apple cider vinegar on top. Optional to sprinkle some Thai chili powder and a bit of black pepper.

In my previous article ,I wrote about the Earth Kitchen and what it is? And how do you set up your Earth Kitchen as well . I also talked about Juicing for life ,and how to make the juices more delicious for your taste buds. I also talked about the benefits of Juicing to the body and about what to do with the left over fibers from your juice machine.
In this article I will talk about Earths Plant Based Diets,Longevity,the Blue Zones,and the importance of moving your body.I say moving your body, I do not use the word exercise.

You may be surprised that I do not think of Breakfast in the modern traditional kind of way. Most every person on and off line, including Authority sites will say “ You must eat a big breakfast to keep you going through out the day” or something like that. Really? We are being told that to stay healthy one should never skip breakfast , and one should always have their largest meal of the day in the morning upon rising.

For a long time I thought this way as well, until I happen to connect the dots ,with a little research and a bit of common sense. Studies coming out of Japan , have found just the opposite to be true regarding the idea of having your breakfast the biggest meal of the day. Their findings show,that the largest meal should actually be at lunch time and not breakfast and this is what their research tells us. When you sleep , your body is actually FASTING, and this is the time that your immune system is doing its work to repair your body. Plus your digestive organs have a well deserved rest. Also at the time of sleep ,your body is becoming very dehydrated (Losing Water) as much as one quart of water for some people just through respiration .Just through your breathing where carbon dioxide ,and water are expelled from your body it can all add up after 7 or 8 hours of sleep.
So when you do wake up there are 2 things that need to be addressed?
You are dehydrated so you need water , at least one glass full or something liquid that hydrates your body first thing in the morning . But most people run for the coffee and this addictive habit actually makes matters worse for you by dehydrating your bodies internal system ,taking even more water out of your body. This alone with the caffeine fix will tax your adrenal glands and contribute to an acid environment in your body. I know most people do not want to hear this but body water hydration through out the day is one of the best things you can do for losing excess weight .Drinking enough water and high water content foods like fresh fruits and vegetables will give you more vibrant energy carried forward into the day. It works for me and it can work for you as well.

The second point is during our waking hours in the early morning we are technically still in our FAST. So by eating a heavy starchy breakfast we are abruptly breaking this fast, and that puts a heavy demand on our digestion system ,especially if you are rushed for work in the morning.
A heavy cooked breakfast , that is lacking in life giving enzymes,high in refined sugars and caffeine, Gluten Grains,with animal proteins in excess will actually take a very long time to digest properly before your next meal. This kind of breakfast will make the transit time in your body normally very long, especially if you live a sedentary life style like I did at one time in my life. When you compound this problem in days then weeks then months or even years of habit then things can start to go very wrong.
Strange unexplained symptoms, moodiness,possible brain fog, constipation, insomnia,joint pain,lethargy and so on that I have experienced in the distant past,can occur. And to day I have lived pain free for years , and have never looked back.

I know this because I used to be there more than 2 decades ago, and it took some time for me to figure it out ,plus a strong will to learn about what is really going on out there,in regards to nutrition, studies of how other people are living, and coupled with my own experience with health and wellness.

Now we know why a Breakfast in the morning should be a light one .And,we know now that our breakfast should be very high in water content with out the stimulants,and heavy starches and excess animal fat and protein. We know now that our breakfast should be nutritionally dense and loaded with natures minerals and vitamins that only a mostly raw Whole Food Plant Based diet can provide. A breakfast with all its natural anti oxidants and life giving plant enzymes intake.

To recap, you are still technically fasting your body at waking hours in the morning and you are dehydrated from loss of water through your 6 to 8 hours sleep and respiration, so what is a good breakfast for you ,to take care of this phenomenon?

For me I go for what ever is fresh and available with out making things to complicated. My breakfast will only take between 10 to 15 minutes of my time and it is very simple as you can see from the photo. I did not even record the ingredients as I usually make my breakfast on the spot, and it usually comes out tasty and satisfying with out any digestive problems to myself what so ever.

Since I made this breakfast a few days ago at the time of this writing I will base the ingredients on my recollection and the photo presented.
Because I live on a tropical island named Phuket located near the southern end of the country Thailand my selection of ingredients are very large and diverse.I also enjoy many exotic local organic fruits and vegetables, plus a few western natural whole foods to add for more variety and taste to my food presentations.

Ingredients: Fresh Wedges of Mandarine Orange ,Organic Apple pieces,Papaya pieces,Pineapple Pieces,Desiccated Coconut, Cold Pressed Coconut Oil with some fresh coconut meat and water, 2 lime wedges, Bee Pollen, Fresh assortment of leafy green herbs,Sprouted Almond nuts, Sprouted Walnut,Fresh grated Ginger Root, or Ginger powder for the tart taste, a bit of Ground Cinnamon and a touch of Raw unfiltered Honey with Bee Pollen. I may have added a dash of green Super Foods such as Spirulina, Chlorella,or some Grass Powder like Wheat Grass,or Barley Grass. Often I may even add hydrated soaked seaweed to the breakfast for my minerals and essential iodine.

The beverage is Coconut water with Lime Juice, a dash of Organic Cold Pressed Apple Cider Vinegar with a little bit of Stevia or Raw Honey to bring down and neutralize the bite and sourness of the Lime and Apple Cider. You will notice in the photo that not to much liquid is consumed at the meal. The reason for this is simple as the digestive enzymes released by your Pancreas does a better job with your food chewed well mixed into a chyme. Your digestive organs would need to release more enzymes to compete with the additional liquid so drinking between meals is better for your health than drinking a lot at one sitting with your meal.

On the napkin is a very delicious and edible Thai Herb called the Thai Olive Branch that I grow in my garden every where in the ground and in clay pots.
This Thai and Mediterranean plant ,has a very savory lemony taste and I include it in all my Recipe Photo Shoots. (If you ever find your self out of Lemmon,and you need that citrus taste you can substitute for Thai Olive Leaf.)

Taste is very important to me in everything I do, and this is how I can best describe my breakfast to you, seen above in my garden photo shoot.

This hydrating breakfast will stay with you as it is very high in dietary fiber ,with high water content.
Bee pollen is Natures Vitamin and Mineral supplement that delivers more than several thousand different enzymes and organic micro nutrients that are not found as much on other foods. Like all natural potent food sources it is a good idea to first start out with small dosages,and later you can increase the amount.And it is always a good idea to rotate your Super foods and even go on and off of them on occasion and by doing this, you have some insurance that you will benefit and get the most Health out of your nutrition.
Variety with moderation and complete digestion in the mouth is King for the best assimilation of nutrients from your whole food plant based diet.

This breakfast meal supplies essential Omega 3 Fatty Acids from the sprouted almonds and walnut.Sprouting nuts is easy and efficient . Just pour your selected nuts into a glass jar and fill water so that there is about one inch of liquid above the nuts. With out the lid on you can leave the jar over night like this then in the morning ,pour out all the water and rinse the nuts several times with pure water.
Then take a plate and place a natural fiber towel over top and spread your nuts over the towel to absorb some of the excess moisture. Fold the ends of the towel over to place them in darkness for a day or even, half a day and you will notice that each nut has enlarged to even twice its size. When they are dry you can place them in your glass jar with the lid secure and store them in your refrigerator. They will keep this way for days. Almonds taste like chocolate on occasion no kidding , I have gotten a lot of surprise comments like this from some of my quests.

This article is one of the most important health and wellness tips that I am putting on the table for you to date. Many people do not know what wheat grass is , or how to make it, or tasted it , or what it does for your body. I can say that in the first half of my life ,I never even heard of this deep green liquid beverage called Wheat Grass ,until I tried it one day at my local health food store back in the middle 80s.

What really struck me about this store was first the vibrancy and freshness of the huge selection of produce, and then the smaller section of what I thought looked like the typical processed food illes that I was used to seeing in the other grocery stores that I shopped at.
And then with more careful inspection I soon realized that I was looking at bottled and packaged foods of Vitamin and Mineral Supplements, Super Foods, Herbs ,Tingsters, Herbal Teas,natural personal body care products and food based nutritional extracts to just name a few. After the stores knowledgable clerk kindly explained to me what each product item was, and what it could do for me , I have to admit that at the time ,I was very overwhelmed with information overload, and headed over to the checkout counter with these new strange novelty health items in my arms.

Waiting patiently with other customers inline in front of me, I noticed several racks of free health pamphlets on display and I was again distracted with my curiosity taking in all this material with new strange names that where not part of my vocabulary. Not waisting any time

I quickly gathered up every health pamphlet on display that I could fit into a nearby shopping cart with my purchased items as the rest of the customers where already long gone by then. As I filled my cart up, I noticed out of the corner of my eye,an impressive library of health books in the far corner of the store, but the boat load of freebies will have to do for now, was all I could think.

I can still remember to this day the way my Cashier Lady friend smiled and looked at me knowingly like I was her first Newbie Customer of the day but friendly just the same.
Little did I know at the time that I possessed a Wealth of Health information even though it was condensed down ,and to the point.I had so much of it, that I could have easily wallpapered my small apartment with much to spare.

It was noon now and before I got to my car,I stopped off at my first health food eatery and ordered my first Avocado Whole grain sandwich with herb tea. I really must have lived a sheltered life I thought to myself .Needless to say my first taste of health food was delicious and since then, Avocado the good fat , has been a key ingredient in many of my recipes.

Have you ever seen the movie Forest Gump staring the actor Tom Hanks? If you haven’t it is a must see movie as this main character in the film would innocently stumble upon new situations in his life with out giving up. Back then I had no idea what I was doing, I had no idea that I was later detoxing myself with all the information found in my self help pamphlets.I did not know or understand that I was doing the right thing for my body at the time.Like Forest Gump, I just knew that I was feeling better with time , and my excess weight just dropped off of me.

Celiac Disease is an autoimmune disorder that causes a persons internal environment in the small intestinal tract to be damaged ,creating problems of malabsorption of nutrients that could lead to malnutrition, and whole list of unexplained symptoms in the body.

Other people could simply have an intolerance to Gluten or just have allergic reactions to the offending protein.

The problem with wheat and related Gluten grains are simple. The symptoms are so varied that they can mimic other ailments in the body and never get diagnosed, or even worse the chronic damage to the small intestines could go on with out exhibiting any symptoms at all in the person.
The good news is that Wheat Grass has no Gluten at all as the protein is dissolved into the wheat berries itself and is not found in the grass blades. So it is safe for all to drink Wheat Grass with out the risk of Gluten intolerance or to experience allergic reactions from consuming this liquid sunshine beverage.
To get around this potential problem , I eat a varied diet with some days having no grain at all.
It really is not difficult as there are so many alternative recipe ideas out there that do not include grains of any kind and I make many of them every day in my garden kitchen and they are very delicious. The Gluten grains to eat less of or to eliminate from your diet is Wheat Berries ,Spelt, Rye ,Triticale and Kamut.

The second thing that you can do is go for the non gluten grains ,such as Buckwheat which is really not related to wheat at all but classified as a fruit seed, Amaranth and Quinoa are ancient small grains that look more like seeds, plus Corn ( make sure its organic). Millet is a delicious small nutty tasting grain. Brown Rice including all other varieties of rice that are in the hundreds ,plus my favorite germinated GABA brown rice is also a good choice to make. So there you can see that there is a lot of non gluten delicious choises for you to make and I think it just makes good nutritional sense for your health to include a big variety of grains on rotation with even a few non grain days to give your self maximum nutritional support.

When on occasion I do eat Glutinous Wheat Berries , my method of preparation will take some of the gluten out of the Wheat Berries by sprouting for 2 to 3 days then steaming them there after.
It does seem to most people that it is a lot of trouble to do this,but for me it is not because it only takes me a couple of minutes a day to prepare them out of my schedule.
The big thing that I wish to convey here to you,is that many Processed Foods ,mostly from the Food Giants, have the protein gluten as a main ingredient, a secondary ingredient , or even a hidden unlabeled ingredient and I see this all the time. I do not eat processed food in my life style with few exceptions. It is not difficult to do and it can be done.

Barry’s Wheat Grass Experience Overseas:

The method for growing Wheat Grass in pots is really easy to do, as any person can learn to do this wonderful act of producing living foods. The great part of this is you do not need a traditional garden ,just a dark area of your kitchen or bath room that takes up a small space.
The important thing to have of course is a reputable ORGANIC seed supplier that has a good track record for delivering seeds that can sprout consistently . If the Wheat Barrie grains don’t sprout for more than at least 80 % of the seed planted then I would reconsider looking for another company for better sprouting results. Also it is important to note that if you see a lot of grains floating on the water surface that this is not a good sign.Wheat Berries that float normally do not sprout. Not all grains of wheat sprout at the same consistency so it is a good idea to start with grains locally to see how it goes with a small batch , and try another. I have had success and less successful results this way.

A good time to start is just before bedtime so allow yourself a few minutes for this.
Once you have your wheat berries then decide how much you would like to sprout ?and store the rest of your grains in airtight glass mason jars in a cool dark storage place.For the first time you may want to start of with a smaller amount of grain to cover ,lets say the estimated surface area of two clay pots 12 inches across? Or for what ever is available for your first time out.

Day 1:Place your wheat berries in a large ceramic or glass mixing bowl, (Never use Plastic) . Then fill with pure filtered water 3 to 4 inches above the surface level of your grains and stir with large spoon mixing the whole mixture. You will probably notice a lot of sediment and coloring in the water. It is important to rinse off all the gray sprouted water by taking a pail and placing a metal colander over top to pour your grains into it as the water collects at the base of the pail. Keep repeating this process until the water is crystal clear to the eyes. It should take about only 3 rinses to achieve this result. This is important because for best results you want to release all the protective enzyme inhibiters that surround each wheat berry grain that has a membrane coating , keeping the grain dormant indefinitely until the right conditions are presented such as water , air, and darkness.

Note about the collected rinse water: The water collected in the pail is excellent nurishment for your house plants or garden outside .

Then fill your bowl of Wheat Berries once more again ,with enough water ,about 3 inches above the grains surface. Lay a kitchen towel loosly over the bowl to create darkness ,turn off all the lights and then go to bed.

Day 2: In the morning check up on your bowl of submerged wheat berries, you may notice a difference in the way they look? Like looking more plump,thats a good sign as they soaked up some of the water.

Repeat Day 1 of rinsing until the water is clear again. Then inside of your metal colander spread a thin layer of all your Wheat Berries using the bottom round side of your big spoon to form a punch bowl shape of grains spreading up and around the colanders insides. You may need 2 stainless steel colanders to finish the job.

NOTE:Why I believe my colander method is a better, than the jar method? First you only attend the sprouts once per day and not 2 times like the jar method. And secondly I find that one day is saved in the total sprouting process, because my method exposes more circulating air and less moister , helping the grains to sprout faster.
Third there is no chance for the grains to spoil or grow mould from having too much moister and not enough air circulation. So in my opinion this method is more efficient and you get faster,and better results.

Put a dinner plate under the colander to collect any residual water ,with your spoon ,again spread the grains across and up the sides walls of your colander. Then cover the colander with a loose towel to put your sprouts in darkness again ,but also they are allowed to breath. Move everything to the darkest part of your kitchen or bathroom with the lights out. Or you can even put them in your kitchen cupboard with the door slightly open for air circulation using any object as a stopper.

Day 3 : In the morning inspect your colander of sprouted wheat , what do you see?
This time your Wheat Berry grains will be even more swelled up, but also a small stem like growth may have appeared and this indicates that your grain is starting to germinate and sprout for planting later.
I still get goose bumps with excitement , even today when I see this miracle of nature happen and I have been doing this for more than 25 years now. I sprout almost everything from different grains,seeds,legumes and nuts and it still fascinates me.

Repeat the rinsing process from day 2 until the water in the bowl is clear again then place a ,spread the grains as you did before along the insides of your colander , Then place a towel over the colander of grains to put into darkness again.

The next step is to go to your local nursery garden shop,where they sell a bag of dark rich organic soil.
And you would need a couple of clay pots with the holes at the bottom and also around the sides if you can find them but don’t worry a normal caly pot will do as well. In the photo you can see that the Wheat Grass roots have actually done by spreading deep through the soil ,and even out through the pots many holes. More air circulation in the soil helps faster growth from using these kinds of clay pots.

Buy a bag of medium size stones or you can even use discarded broken pieces of pottery as a drainage layer placed at the bottom of each clay pot.

The reason that I do not use plastic pots is in the fact that environmentally they are hazardous. Plastic is made with petrol chemicals that leech by product toxins into our eco system. I know we have plastic all around us it is not avoidable, I just think it should not be part of our soil and in the foods that we eat.Did you know that the largest land fill on our planet is not even on land. No its out in the Pacific ocean between the continental United States and the islands of Hawaii. This plastic land fill is the size of the state of Texas. Our unsustainable love affair with plastic pollution cannot be contained , and the marine life such as large filter feeders and smaller marine life is being adversely affected in that area.
Besides I think natural clay pots ,or ceramic as well just look better in the garden.And they look better on your window sill or any place in your home much more then plastic pots.

Day 4: Repeat the procedure again of rinsing and storage of grains in your colanders, and this time have a good inspection of your wheat berries.If you see some good stem growth on most of all your wheat berries at least 80 % of them, then it is a good time for planting.
If not then cover your colender with a towel and store them in darkness for planting the next morning.

Asuming that your wheat berries are all looking good,then bring out your clay pots, and make sure there is about 2 inches of stones ,broken pottery,marbles, or any hard subtances to allow good drainage.
Next add your Organic soil into the pot to leave at least 2 to 3 inches of space between the rim and surface of soil. A good 5 to 6 inches depth of soil is good.

Your wheat berries at this stage should have soft but firm bodies that can be easily sqeezed between your fingers .
Whet the soil down a little with pure filtered water , but not too much to form any puddle.
Spread your sprouted wheat berries in all directions over the surface of the soil,so that the grains are touching next to each other but not piled on top of each other.

Then place a dry news paper on top to cover the surface.
Then using a spray bottle wet the news paper down and you can drape a loose towel over top for darkness. Any seed, grain, legume or nut that is exposed to water and kept in darkness all the time like this , will think that they are actually in the ground ,and will start to sprout.
Your potted grains need to be still inside for the warmth of room temperature to encourage sprouting. Later in the day or just before you go to bed if you see that the news paper has dried out just give it another spray of water to wet the paper down again. No peaking!

Day 5:On this early morning day,all your TLC should be bringing you sure signs of LIFE as you slowly peel away the news papers.

What do you see? If you see most of all your grain sprouts reaching for the sky with longer stems then you have succeeded . They will be a color of pale cream and light green.

Give them some pure filtered water ,just enough to saturate the soil ,with out puddles.
You can leave them uncovered for good air circulation but still in darkness.
Before you go to bed you can give them some more water. “Good Night”

Day 6: On this morning, again inspect your juvenile wheat grass . You should see a lot of pale colored greenish hair growing upwards peaking over the rim of your clay pots.This is a good time to take them out side if it is a sunny summer day . If it is a cold winter then put the pots beside a big window for lots of sunshine . It is still important that the temperature around the wheat grass is still warm or room temperature. Water them, and water them again before bed.

Day 7: In the morning you should see a dramatic difference in your wheat grass by now!
The grasses are now long and green all bunched together ,maybe 5 to 6 inches tall? You can still let your grass grow another day all the way up to 10 days as you harvest what you need for your juicing pleasure. Always water once in the morning and once in the evening. You may have noticed that I purposely had you tend to your growing wheat grass either early in the morning and later in the evening only because this would not interfere with your daily schedule and in this way the program can be fitted in even for the busy person.
To harvest your wheat grass ,just use some scissors,and cut near the roots for the best nutrition.
Cut as much wheat grass as you need to make 4 ounces of juice.

I use a manual hand crank juicer that does a good job and they are affordable.
A slower revolution of the blades preserves more of the nutrition and with less oxidation.
The fibrous pulp will come out one end and the dark green juice will be collected in a container. I compost the fiber or if you don’t have a com-poster then you can mix the fiber in with your potting soil deep as it will all break down eventually and add aeration to the soil.

The Tray Method:
Another popular method among Sproutarians is to us a larger surface area using a shallow square or rectangle shaped tray.

It is the same method as the pots, but this time you just spread only about inch thick of organic peat moss. Another option is using some organic rich dark loamy garden soil .Sometimes I make a soil amendment of adding some pre soaked seaweed ,such as Wakami ,Kelp,or Chinese to my blender with a little pure water and blend into a liquid. This can be added and worked into the soil with a simple kitchen fork for extra fertilization to the soil but don’t overdo it as the wheat sprout is a hardy grain. Water the soil with out forming puddles.Then spread the germinated wheat sprouts across to the edges of the tray,so that the grains are touching but not piled on top of each other.Water the sprouts with out forming any puddle. And with a spray bottle wet them down. Cover them with dry newspaper , and wet the news paper down with out puddling.
Keep the trays inside in a dark room lightly covered with a towel for smaller productions and a bed spread for larger productions. Your trays of sprouts can also be stored in your cabinetry with the door slightly opened for air with darkness for the next 3 days . One time in the morning and one time in the evening give water to your sprouts and on the third day of awakening you should see a forest of pale green colored wheat grass. First move your trays to indirect natural sunlight . Then over the days ,the trays can be further moved to fuller sun light for maximum effect for photosynthesis of your grass blades, to collect energy from the sun.

It was just a matter of time , when after days, then weeks, then months of experimentation I started to see positive results in my health. And during my transition time ,my new way of thinking about food changed dramatically. I was no longer eating food off the canteen truck like I used to ,and instead I was bringing in my clearly marked bagged lunches and green smoothies into work. Looking inside the large studio refrigerator every day, I could not help notice how different the diets where of most of my colleagues in comparison to what I was eating.

I had realized then that I had become a Fruitarian,Vegetarian,Rawtarian,Sproutarian,Medtarian,(Mediterranean)
Macterian,(Macrobiotics)and Vegan days all rolled up into one and my lunches reflected this change in my life.

You have to understand that I was working in a Cartoon Studio in Hollywood California for Hanna -Barbera Studios at that time ,animating the cartoon feature film production ,entitled “Once Upon a Forest” a film about the environment of animals in the forest.
I was drinking so much carrot juice at the time , that my skin was actually taking on an orange color mostly in my hands ,but it was only temporary and it disappeared when I cut back.

I remember it was in 1990 when I got that telephone call at work , from Walt Disney Company to work overseas in Korea for the next 2 years.I know that this may raise a few eye brows among some of you, but I was actually practicing Agriculture in my business hotel room in down town Soul Korea. I had everything covered up in darkness so the maid was non the wiser.I was using the Matt Method,colander staining method ,hidden away in dresser drawers, closets, and under the bed. I had many of my sprouts in jars hidden under several card board boxes as well.

It was usually on the third day,that the gig was up and my secret was out because of course my sprouts needed fresh air and sunlight to grow and prosper.

During those 2 years It was not just the wheat grass growing in the various hotel rooms (the later ones had balconies)with stacks of trays everywhere ,it was everything else too like , Mung, Alfalfa, Pumpkin, Sunflower,Basil,Barley and others.

Eventually I moved into the privacy of my own flat to grow my food, and to live my Sproutarian Life in more privacy. Some times I would go to a nice restaurant , where the management new me, and accepted my patronage for some of my favorite Korean dishes like Brown Rice Bi-Bi m-Bap ,a Salad,with Miso Soup and some Herbal Tea. Occasionally I would slip some of my home made sprouts into my dish served.

But this was a good way for me to supplement my Korean diet and I enjoyed the Korean Red and White Ginseng that was on offer by the store box fulls, and the traditional Kimchi. (Fermented vegetables) Since then I moved around a lot living in different places all over Asia and Europe .I discovered different ethnic ,and cultural cuisines that up to this day has profoundly influenced my way of thinking about food, and the recipes that followed.
For the serious Wheat Grass Grower that happens to live in a tropical climate all year round like myself, an interesting option became available to me. Growing wheat grass outdoors in raised garden beds by the boat load was possible even living here in Phuket Thailand !

When you prepare your recipes using Organic or Heirloom produce,you have a wonderful option to save yourself a lot of money and to put more food on your table for your self and your family and it is all for FREE.

Save your seeds for later use. You can sprout with them, grow fruits and vegetables in your existing garden and a lot more. I don’t know why I did not think of this years ago? I have been practicing this seed saving good for the environment habit for about 4 years now from this writing.
When you think of it our forefathers and family owned farms for generations have been saving their own seeds for the next generation of harvest. So why cant we do the same thing even though it is on a much smaller scale? In my teens I used to work for a grocery store, and it just amazed me how much expired food was being dumped out along with the seeds to our land fills. What a waste of resources.

“Seeds are a gift from nature to be used over and over again, and not to be discarded for ever.”

Seed saving is easy and practical when you schedule in the time to practice this important way of living green.

First you want to save seeds that you grow, and that your garden naturally grows as your existing soil will already be suited for this purpose. For example when I compost my kitchen scraps then later distribute the green manure around my garden , I see in time hundreds of little Papaya trees growing everywhere so in this case I do not have to save seeds for this tropical fruit,as nature does it for me.

It is important to use organic heirloom seeds ( Original seed that has been saved by generations before the industrial revolution)from your produce , as hybrid conventional produce has been denatured and treated by the biotech industry to make the food insect resistant, and like I have been saying all along that plants are systemic meaning that their root systems absorb everything including the pesticide and herbicide chemical applied.

It is important for me to note here ,that you should consider what local foods are grown best in your area as these seeds will do well, and should be your first choice. For example I would not save seeds of apple because they are not grown in my area, but Papaya is. This could be the opposite case where you happen to live?
When you have formulated a list of fruits and vegetables plus herbs that grow well in your area then it is time for you to save seeds of that nature.

I am going to be really general here as the plant kingdom offers many different ways of saving seed that is appropriate for each plant and area. It is best to pick your best looking , plant that is ready to eat for example a tomato. Any fleshy plant with lots of small seeds will be difficult to save so a method of separating most of the pulp and skin by hand must be done first. Then place the flesh and seeds into a glass of water and wait for the seeds to settle to the bottom. Depending on the plant it could take hours to days. Then place the seeds in a colander straining basket and wash off the remaining pulp thourouly. You can now place your wet seeds on a natural fiber towel or floor matt.(a towel that has not been bleached white with the chemical dioxin)

Spread your seeds across half of the towel or matt ,then fold the other half over your seeds, and then again fold again to the size of a quarter of your original matt or towel size. You can also role the your matt loosely into a burrito for air circulation.
The moister from the seeds will be absorbed into the matt or towel and left this way for half a day or more. Uncover the matt or towel, then place your seeds on glass or ceramic dish ware, or on a large window screen that has been converted into a table for drying out your seeds in indirect sun light. When your seeds are perfectly dry and clean with out any moister to the touch, then the seeds can be packaged in non white natural paper envelopes, Next of course it is important to write the date and the name of the seed on the envelope.

I like to put my envelopes in air tight mason jars and store them in my refrigerator or even my wine cooler. Seeds age well under these conditions and they are good for up to 2 years or more.
For a longer time put your stored seeds in the freezer that can keep for up to 10 years or more before use.
In some cases you can go right into food production. For instance the the King of all fruits the Durian fruit which is one of my favorites has a different approach.
A good durian is when you shake the fruit violently close to your ear, and you can hear the bods rattle back and fourth,then you know its a good one. Just make sure you where your heavy protective mitts as the hard spikes of this fruit is fearsome and dangerous if not handled carefully.
Cut the pungent Durian length wise and remove the fleshy meat from the seeds by hand.
Its the Fruity meat that is so offensive to so many people , in the smell department but I feel different about it now as my taste buds and nose has changed over the years.The seeds are large like the size of a golf ball,but of course my garden coconut is the king in the size department.
Soak the Durian seeds in a large bowl of water for 3 days or until you see a growth tip at the end ,then plant them in a pot side ways and cover with soil so that you see just a bit of the seed .In one or two months you have a durian tree about 7 to 12 inches high.
Seeds for sprouting,gardening and saving is a great way to connect with nature.
